Dutch Buffalo Farm is a diversified market garden and CSA in Pittsboro, North Carolina. Our goal is to provide our members and market customers with a wide variety of healthy fruits and vegetables. We work to provide produce at a quantity and price that allows fresh local food to become a meaningful addition to the diet of our community. We use innovative and responsible production practices to grow a healthy, high-value product for our patrons.

Our farm utilizes the CSA marketing model, or Community Supported Agriculture. A CSA has a core group of members who subscribe to the farm for a season; in return they receive a weekly box of produce from the farm. We also sell weekly at the Chatham Mills Farmers’ Market on Saturdays from 8-noon.

Winter Edible Piedmont Now in Stands (featuring yours truly)

For those of you who have wondered what we’ve been up to over the last few months, check out the latest Edible Piedmont! The wonderful folks at the celebrated local-food-centric quarterly magazine asked us to keep a journal of our experience as young farmers and this is our second installment. We hope you enjoy it. It is a real honor to be featured in the same magazine with Cathy Jones and Mike Perry (Perrywinkle Farm), Jeremiah Jones (GrassRoots Pork Company) and so many other incredible people in North Carolina’s food and farming community. Fall Greens are Here – Come See Us At Market!

Arugula and tender braising mix with mustard-spinach, daikon leaves and red giant mustard are the first of many fall crops on their way in. We still have peppers and sungold tomatoes, so come enjoy the seasonal overlap! We’ll be at the Carolina Brewery Farmers’ Market in Pittsboro from 8 am – noon on Saturdays throughout the fall. What’s in the Box, 7/30/10

Hi all,

What a rain! We got just shy of three inches in the gauge; needless to say everyone is considerably perkier. Still have lots of Romas for the canning, so to quote Farrell, “If you can, do.” Just ask about it when you pick up your box. Also let us know if you would like extra basil, we know there are some pesto-lovers out there.

Bulk items aside, in your box this week you will find:

Jalapenos (~a sampling~)

If you just can’t get enough Dutch Buffalo tomatoes (or want someone else to prepare them for you!) you can always visit one of the great local businesses that are using them. Angelina’s Kitchen, Chatham Marketplace and The City Tap are all doing delicious things with our Romas, Celebrities and Green Zebras, so give them a try if you get a chance. And if you haven’t run out of steam in your own kitchen, here’s a threesome of tomato recipes from Edible Piedmont’s last summer issue.

Hello Everyone,

Hope you’re having a good week so far, and staying cool. This is a picture of our friend, neighbor and veggie-washer extraordinaire, holding one of the biggest garlic bulbs we’ve ever grown. We thought it appropriate in light of the new Twilight movie. Just doing our small part to keep vampires away from the teens of Chatham County…

In your box this week you will find:

Fingerling Potatoes
Sunflowers
Green Zebra Tomatoes
Roma Tomatoes
Basil
Magda Coosa Squash

This is a VERY simple recipe but is a summer treat that should not be missed. One of our members shared this dish with us the other night and we would be remiss in not reminding everyone of the joys of the Caprese Salad: both the Green Zebras and the Romas are excellent sliced, drizzled with olive oil, salt and pepper and served with fresh mozzarella, shredded basil and crusty bread.

Howdy Folks,

Welcome to the second week of summer (astronomically speaking). We have been really enjoying this weather and hope you have too. Recent news from the farm includes: new tines for the tiller, tomato tying and watching the slicing tomatoes turn ever lighter shades of green. It is a watched pot but it is getting hotter! Still green tomatoes this week but don’t worry the red ones are coming soon, and we have Sungolds to ease the wait;)

In your box this week:

Blueberries
Russet Potatoes
Braising Mix
Haricot Verts (Frenchie Green Beans)
Thai Basil
Green Tomatoes
Onions
Sungold Tomatoes (try dehydrating these for a good snack/salad topper)

Here’s a cool recipe for Green Tomato Ketchup. It is given in large canning amounts, but you can divide the recipe by 3 to get 2 pints worth.

Hello Everyone,

Well it’s officially HOT as you know what. We were hoping we got out cheap with that early heat in April/May(haha), but alas it looks like we get two summers this year! This email’s going to be short & sweet, kind of like the star of this week’s box…

Hey Everyone!

Hope you’re having a great week so far. We are waiting with bated breath for the first tomatoes – it’s definitely a watched pot at this point but it is getting hotter!!! Also beans and basil coming soon. Right now we’re enjoying the first squashes, and the potatoes & onions which feature prominently in this week’s simple but tasty recipe. In your box this week you will find:

Summer Squash (Zephyr)
New Potatoes(Red Norland)

Braising Mix (Gator Spinach, Chard, Orach, Callaloo)

Skillet Squash and Potatoes (yes it really is this easy!) from Bonnie Milner. This would go great also in quiche or with a little curry added and used as an east/west quesadilla filling. Enjoy.

Lets hear it for the weather! Hope everyone is well and getting the same variety of thunderboomers we’ve been experiencing out here. So for our sixth week……

Escarole (similar to Endive, bitter salad green that goes great with sweet or creamy dressings, sauteed, braised or used in soups, or in recipes like this one)
