What’s in the Box 5/21/10

Howdy Folks,

We are en route to deliver the veggies for Sunday’s Farm to Fork Picnic. We can’t wait to tell you all about it next week (with pictures!) and about all the great farmers, chefs and artisans we have in the Triangle region. We really are pretty lucky here, both in producers and resources. This week our extension agent, Debbie Roos, came out to help us figure out a plant problem. She is one of the only extension agents in North Carolina who specializes in sustainable agriculture and we have her here in Chatham County. If you are into plants or growing anything her Growing Small Farms website is a good resource.

In your box this week you will find:

-Fava Beans
-Sugar Snap Peas
-Garlic Scapes
-Salad Mix
-Braising Mix

On the fava beans: We really enjoyed them last night just boiled until tender and with a little salt. There are some great recipes out there though, like this one from NPR’s website: Fava Beans: A Little Spring On Your Plate (

Now, for the garlic scapes. These are a real treat, and they’re only around for a short time. Veteran members will remember the tender flower stalks of the garlic plant, some people describe them as asparagus in texture with a mild garlic flavor. We like them sauteed in butter and added to quesadillas, but they are great in quiches, stir-fries, in pesto and more. Enjoy them while they’re here and have fun experimenting!
